What is the difference between them? And does it include vehicle health in ski/motorcycle missions?

Godmode prevents you from dying as long as the damage taken does not exceed your max health. Unlimited Health should prevent you from dying no matter the damage taken.
They basically do the same and you can choose which one you want to use :)
Both cheats probably do not work for vehicles otherwise it would be mentioned in the cheatname/description.
