Also I should add that for some reason one of my employees I maxed out as a merch manager no longer works in the shop, but is still on payroll. Cannot seem to rehire or fire.

Hiya, I've tested the cheat and it seems to work fine, keep it mind you have to have held the item in your hand for it to be selected

Regarding the employees I'm not sure we can help you out here, the cheats don't affect the employment status. Are you playing on an experimental version? Otherwise you can also report that bug directly to the game developers.
