we've updated the descriptions for the "Add XP", "Add Attribute / Talent Points" and "Set Item Amount (hovered in inventory)" cheats. Please try giving yourself just enough XP to reach the point where you are about to level up, and earn the remaining XP through normal gameplay. This should ensure that your stats are saved when you restart the game.
